Green Detox Soup

 
 
 

SERVING SIZE: 2 PLUS LEFTOVERS TO FREEZE

INGREDIENTS:

2 tbsp olive oil

4 cups bone broth

All veggies chopped:

1 onion

4 cloves garlic

2 tbsp ginger

2 zucchini

3 heads broccoli

1/2 fennel bulb

1 cup parsley

1 head of kale

To taste:

Salt

Pepper

Red pepper flakes Lemon juice

 
 
 

INSTRUCTIONS:

1. Heat olive oil over medium heat in a large pot or dutch oven.

2. Add garlic, onion and ginger and sauté for 2-3 minutes.

3. Add the rest of the veggies and sauté for 10 minutes.

4. Add the bone broth and simmer for 20-30 mins or until veggies are cooked.

5. Add salt, pepper, red pepper flakes and lemon to taste.

6. Blend in blender or using immersion blender.

7. Drizzle with olive oil and sprinkle maldon.
