HEALTHY OATMEAL CHOCOLATE CHIP COOKIE BALLS

 

When I was a little girl, my dad would often make me my favorite “snack” – 1 tbsp of creamy or crunchy peanut butter mixed with 1 tbsp of creamed honey (had to be creamed). I would eat it with a teaspoon out of a teacup at our kitchen island. To this day (read: last night) that little concoction is a go to dessert of mine.

I love to have a little something sweet after dinner, but I’m often discouraged to turn the oven on when I realize how much prep and cleanup a simple cookie recipe can be. I end up scavenging the fridge and pantry for a somewhat healthy treat and I’m usually dissatisfied.

The following recipe can be modified to your liking. Not into chocolate chips? Try cacao nibs. Sick of almond butter? Cashew butter would work great. I had all of these ingredients on hand and the balls came together within 10 minutes (aka perfect for a post dinner dessert session). Also, the level of sweetness combined with the fat keeps you satiated and satisfied until morning. PS – these are great for new moms if you know what I mean 

Healthy Oatmeal Chocolate Chip Cookie Balls
makes 20 

2 cups oats
½ cup ground flaxseed
3 tbsp shredded coconut
1 cup almond butter
1/2 cup honey
1 tsp vanilla
1/2 cup dark chocolate chips

  1. In an electric mixer, mix all ingredients.

  2. Roll into 2 tbsp sized balls and chill for 30 minutes. These are good up to 2 weeks.
