Peach Basil Salsa & My Favourite Crackers

 

Happy long weekend! I hope you’re all enjoying the summer so far. We’ve been travelling a ton so I am so happy to be home in my routine. I’m headed to SF again next weekend so this last week has been about staying healthy while still enjoying summer (read: rosé). I wanted to make a dip to use up the basil we had in the garden and to take advantage of the booming local peach season, so I decided to make a peach basil salsa for our barbecue tonight. We’ll eat this while Li eats his dinner, and then throw our lemon herb halibut on the grill when he goes down!

I always make sure to have healthy “vehicles” in the house so I can snack guilt-free. As you may know, the internet is obsessed with fiber crackers. From GG’s to Scandinavian Crisp Bread, there are lots of options out there. When I’m shopping for a healthy cracker that I can enjoy with various dips, I always look at a) the fiber content, and b) the ingredient list. Most are filled with ingredients I don’t want, so I was so excited to find Eve’s. They’re locally made in Vancouver and are filled with healthy ingredients like flax, chia and sesame seeds. Needless to say, I’m obsessed and always have them stocked.

Peach Basil Avocado Salsa (with a kick!)

  • 1 ripe peach, diced

  • 1 avocado, diced

  • 1/8 tsp chili powder

  • 1/4 cup basil, chopped

  • 2 tbsp chopped white onion

  • half of a lime, juiced

  • pinch of Maldon

  • Optional: splash of red wine vinegar

Mix all ingredients in a bowl and serve with crackers.

Summer in a bowl 🙂
