MY FAVORITE ROASTED CHICKPEA SALAD
It is no secret that I’m obsessed with roasted chickpeas. I’ve been making them for almost 10 years and I believe I’ve perfected them (humble right?) There is one salad that I make over and over and over again, so I thought I’d share the recipe!
Roasted Chickpeas (can be added to any salad or enjoyed as a standalone snack)
1 can of chickpeas, rinsed and dried
2 tbsp olive oil
pinch of sea salt
1/2 – 1 tsp of indian chili powder (my friend brought this back from india so if you can’t find any, use regular! cumin and/or curry powder also work well)
Roast in oven for 20-25 min at 375F.
Cucumber Chickpea Salad – Serves 2 as a big side
1 cucumber, peeled and deseeded and then chopped
1 roma tomato
1 avocado, chopped
1 tbsp white onion, chopped
1 garlic clove, chopped
juice of half a lime
1-2 tbsp olive oil
pinch of sea salt
pinch of chili powder
Combine all ingredients, add chickpeas on top!
